Do you love nutrition bars, but hate the cost? Most average around two dollars a bar and on a tight college budget that can start to add up. With only four simple ingredients, you can make some of your own to last you over a week. These bars, similar to the popular Larabar, make a great snack for someone on the run!
You will need:
- 4 cups whole, pitted dates
- 2 cups almonds
- 1 cup chocolate chips
- 2 tablespoons natural nut butter
- In a food processor or blender, blend almonds until they are finely chopped; add chocolate chips and finely chopped; pour the mixture into a bowl and set aside
- Mix half the dates in the food processor until a paste forms; add 1 tablespoon of the nut butter, half the nut/chocolate mixture, and mix until evenly combined; place in a pan lined with parchment paper
- Repeat above step with the remaining dates, nut/chocolate mixture, and tablespoon of nut butter
- When all the ingredients are processed, wet hands and use them to press them evenly over the bottom of the pan; make sure the mixture is smooth
- Refrigerate for at least two hours before slicing.
- Enjoy!
