The Guide to Vegetarian Life on Campus

As I myself am a vegetarian, I know it can be a struggle to eat a healthy vegetarian diet while living on a college campus.  Especially for first year students, as the vegetarian options in the dining halls are scarce.  To be a healthy vegetarian requires hard work, so here are some foods and recipes to help you out.


10 Snacks that you should keep in your dorm or house:
1.     Oatmeal packets
2.     Granola
3.     Trail mix
4.     Pita Bread
5.     Hummus
6.     Apple and Peanut Butter
7.     Almonds
8.     Cashews
9.     Peanuts
10.Celery sticks

It can be hard to get a snack when running around on campus because of the lack of options.  Make sure to keep these snacks in your dorm or house to bring with you when you are on the go.

Easy meal idea:
One of my favorites is to make a cheese quesadilla with vegan cheese that can be bought at the Kroger or Giant Eagle near campus.  You can also buy pre-made guacamole to dip your cheese quesadilla in.
You can also buy microwave-cooked rice and add in frozen vegetables to make a nutritious lunch or dinner.

Dining out vegetarian options on or near campus:
1.     Chipotle: Order a burrito bowl with brown rice, lettuce, tomato salsa, black beans (don’t get the pinto beans—they’re made with pork in them!) and corn salsa.
2.     North Star Cafe: Northstar offers one of the best veggie burgers I have ever had.   The restaurant is a little pricey, but it is worth it when you’re craving healthy and flavorful vegetarian food.  For extra flavor, ask for avocado on top.
3.     Red Robin Burger Works: This fast food restaurant just opened on campus and they surprisingly offer a veggie burger for only $5.99!
4.     Noodles & Company: This is one of the only “faster food” places around where you can get tofu added to your meal.  Try it with the Asian Peanut Saute.   If you don’t eat fish, avoid the Pad Thai—it has fish and shellfish!
5.     Jimmy Johns: They have great vegetarian sandwiches!  Try the #6 on wheat bread for a filling and great-tasting lunch.
