The well-known and highly adored grocery store, Trader Joes, was once managed by Doug Rauch, who is now taking on something just as incredible as his previous venture. Former president Rauch has started a new project–one that will potentially reduce food waste by large amounts.
Rauch’s plans are to open a new market, Daily Table, in Dorchester, Massachusetts that will take in excess, overstocked, or very recently expired groceries and then prep and cook it for sale in a method he calls “speed-scratch cooking.” Currently, about 40% of food is being wasted, and Rauch hopes to help decrease this number and create delicious, nutritious, affordable food for consumers. One of the issues the market will most definitely face is trying to get consumers interested in food that is past its expiration date or not cosmetically appealing. Rauch says that, with proper education and promotion of an open mind about food, this should be largely accomplishable.Â
