As a vegetarian, I’m always on the lookout for meatless recipes that are both delicious and simple to make. However, even if you don’t identify as vegetarian or vegan, going meatless just one day a week can have a significant and beneficial impact on both your health and the health of the planet. My personal favorites are this avocado and chickpea salad that makes a filling sandwich perfect for any meal of the day, and these crispy bean and cheese burritos.
