Tequila Lime Cupcakes: Can you Say Yum?

I have no doubt that as we’re trudging through the delightfully white (though sometimes brown and mushy) snow, we’re imagining ourselves relaxing in a tropical paradise away from school, stress, and the unreliable Port Authority buses.

 

So why not jazz up some cupcakes to get the tropical feeling instead? Make a batch of your favorite vanilla cupcakes, and, right when they come out of the oven, poke a few holes at the top using a fork. Brush some tequila on top…and by some I mean anywhere from 1 – 3 coats! No one’s judging.

 

Then, add a tablespoon of lime juice and a tablespoon of tequila to your vanilla frosting, and frost away. These are a simple, fun way to make the winter wonderland (debatable) of Oakland into a tropical and zesty getaway.
