Popular opinion states fall is the best season. In that spirit, I give you five days of fall eating.
All of the recipes come together in less than an hour and use produce that’s in-season in the fall.
Everyday usually consists of a coffee + breakfast + lunch + dinner + dessert (because dessert is the most important meal of all).
day 1
Today is all about pumpkin.

Make your own pumpkin creamer for cold brew. All you need is creamer, pumpkin puree, pumpkin pie spice, vanilla, and sweetener! Follow @kalejunkie on Instagram for the full recipe. I tried this recipe and think it is delicious! If you don’t drink coffee, this creamer would be great in black or chai tea.

If you’re like me, overnight oats are one of your go to breakfasts. Why not add some (pumpkin) spice to them? Say pumpkin pie overnight oats.

Another personal go to: avocado toast. But with avocados out of season, you could always use … pumpkin. This one is so versatile! You can make sweet toasts with peanut butter and apples or you can make a savory ones with brie and other herbs. Or mix in some cream cheese. So many options based on what you have.

Butternut squash soup. Need I say more? Either head on over to Trader Joe’s and Panera if you’re in a pinch. Or if your having a cozy night in why not make this one, which has pumpkin also! Hyggeligt.

These pumpkin chocolate chip cookies are the holy grail. Multiple sources have confirmed this. Super easy to make and so worth it.
DAY 2
You need a break from pumpkin, how about maple?

Let’s start simple with banana pancakes brought to you by Chocolate Covered Katie. I’ve been making her recipes for years now and they are always delicious and easy for those with dietary restrictions. Add pecans, chocolate chips, maple syrup – and voila.

Okay, so this one is a little more involved, but what wouldn’t you do for a fall harvest salad? It has squash, roasted brussel sprouts, and maple tahini dressing. If you’re shorter on time, you can just roast the veggies and have them with the tahini dressing.

Get your protein in by making either maple soy glazed tofu or salmon! Cook some rice and you have yourself a filling meal.

DAY 3
Today is all about comfort foods.

Vegan apple bread. For the vegans in your life! I’ve had this multiple times and it is truly the best way to start the day.

Chicken caesar salad. Or vegan caesar salad!

Tonight’s dinner is potato soup. If you don’t have potatoes, make roasted cauliflower soup!

Peanut butter mousse – Top with chocolate chips and Reese’s peanut butter cups!
DAY 4
Mix and match (with some tomatoes involved).

Today you treat yourself with a cinnamon dolce latte. Make your own or head on down to Starbucks.

Level up with this cinnamon roll oatmeal banana bread.

Shakshuka! While this recipe might be more involved, it can be as simple as you want to make it. It’s as easy as frying some vegetables and adding tomatoes to the mix, then cracking an egg or two on top.

DAY 5

We have to end with a bang. Thus, make these cranberry orange pop tarts. Your soul will thank you.

I always try to incorporate greens into my lunch, but sometimes I’m not in the mood for a salad everyday. Instead, have this lemon kale quinoa bean bowl.

We can’t forget about sweet potatoes. It’s been a long week of cooking, thus we end off easy with a roasted sweet potato. Top with beans, sour cream, spinach, salsa, whatever your heart desires! Or cut up the sweet potato into slices to have sweet potato nachos.
