Micro-Fridge Cooking: Small Kitchen, Big Possibilities- Nachos

For those days when you’re craving something that’s not on the menu at the Hub, try something new: make a dish from scratch!  Purchase students in the residence halls, don’t fear: you don’t need a fancy kitchen to make great tasting food – all you need is a microwave!  Put that MicroFridge to good use – it’s not just for making popcorn anymore. 
 
In this column I plan on sharing easy recipes with you, along with ingredient lists, helpful tips, and step-by-step instructions.  All of these recipes are prepared and taste-tested before they’re posted, so they’re guaranteed to be good.  (I plan on testing out vegetarian and vegan dishes too!)

So have some fun with friends and try out a recipe or two.  Give Micro-Cooking a try and remember: just because you have a small kitchen, doesn’t mean you’re limited in your possibilities!  Happy cooking!

This Week: NACHOS
Culture Shock is coming up this weekend here at school – a weekend notoriously known for its music, parties, and fun times.  Especially being out and about after catching the late-night musical acts, you may find yourself having some serious munchies.  While Culture Shock is a fine excuse to splurge and spend money on carnival food, you can always pop back to your dorm and make up some totally tasty nachos!  Tortilla chips, cheese, and all kinds of toppings make nachos a crowd-pleaser – so invite those friends you meet in the moshpit back for a treat!          

NACHOS
For this dish, you’ll need:

  • A microwave-safe plate
  • Spoons for salsa, sour cream, etc.
  • Napkins! Nachos can be messy!

Ingredients:

  • A generous handful of tortilla chips (try The Garden of Eatin’s Blue Corn Tortilla Chips, which are sold at the More Store!)
  • Shredded cheese – sharp cheddar, Mexican blend – whichever kind you like
  • Salsa (about 1 – 2 tablespoons)
  • Other toppings, if desired: sour cream, jalapenos, lettuce…

Method:

  • Wash your hands before handling food!
  • Spread the chips out on the microwave-safe plate.
  • Sprinkle generously with cheese.
  • Microwave for 45 seconds – 1 minute, or until the cheese is melted and the chips are warm.
  • Top with any remaining toppings (you can microwave again if you want your salsa warmed up).
  • Enjoy, with plenty of napkins!
