Amazing Alternatives: Baked Chicken Fingers

After a few weeks of fitness blogs, I decided to switch it up and do a healthy eating post this week. Ever since I was a kid I’ve been addicted to chicken fingers. Until I was 16, no matter where my family went out to eat, I’d ALWAYS get chicken fingers.

Most renditions of this traditional recipe involve heavily deep frying the breaded chicken in oil. This oil is usually hydrogenated which contains trans fats that can lead to conditions such as heart disease when consumed frequently.

This recipe eliminates the frying and instead bakes the chicken leading to an extremely delicious alternative!

Ingredients:
1 lb boneless, skinless chicken breasts
3 egg whites, lightly beaten
2 cups bread crumbs
Salt and black pepper to taste

Start off by preheating the oven to 450°F (or if otherwise specified on product packaging). Next, pour bread crumbs onto a large plate, lightly beat egg whites in a bowl, and season chicken with salt and pepper.

Cut chicken breasts into strips (make sure to be careful of cross contamination from the raw chicken while using other utensils!) After cutting into strips, dip chicken into egg whites and next into the bread crumbs to coat the chicken.

Place strips onto baking sheet coated with nonstick spray. Bake chicken for 10-12 minutes or until bread crumbs have browned. Let cool, dip in your favorite sauce, and enjoy!

To switch up this recipe, add your favorite seasoning to the bread crumbs before coating!
