1. Cream Cheese Infused Strawberries
Thanks to my advanced speaking class, we had demonstration speeches today. Luckily I had a notecard ready as one of my classmates, Chrissy, was presenting, because this dessert alternative she showed us how to make is one you have to try!
1 Package of Cream Cheese (Softened)
1/3 Cup Powdered Sugar
¼ Teaspoon of Almond Extract or Vanilla (Your Choice)
Cut a hole out of the middle of the freshly washed strawberry. Cream together the ingredients in a bowl until it’s a whipped mixture. Pipe the cream into the strawberry and garnish with grated chocolate or graham cracker crumbs!
2. ‘June Bug’ Non-Alcoholic Refreshing Drink
Need a refreshing spritzer? This ‘June Bug’ is served non-alcoholic, but you may add your favorite rum or vodka to spice it up if you are over 21! This recipe makes four servings and only takes five minutes to make!
Combine ginger ale, grenadine, & orange sherbet and blend well!
3. Fresh Fruit Frozen Popsicles
Looking for a cool down on a hot day? Look no further than these fresh fruit popsicles! These are very healthy and are made in advance, so they are easy to keep on hand!
1 peach, cut into 1/2-inch slices (1/2 cup)
2 kiwis, peeled and sliced into 1/4-inch rounds
3/4 cup strawberries, finely chopped
1/2 cup blueberries
1/2 cup raspberries
1 1/2 to 2 cups of fruit punch or 100 percent white-grape juice
Combine fruit in mixing bowl & arrange the mixture into eight 3-ounce Popsicle molds. Pour enough juice into each mold so that is covers the fruit. Lastly, insert Popsicle sticks and freeze until solid! It usually takes six hours to freeze and it serves eight.
