In college, eating healthy and on a budget may seem difficult. It’s so tempting to order take out, or binge on fries and pasta in the dining halls. It may be even more confusing when you try to buy healthy foods at the store, but don’t exactly know how to cook those foods to taste just as good as those dining hall fries. Though it may seem daunting, it is very possible to create good tasting, healthy food on a budget. Here is one of the recipes that I enjoy making:
Mixed Vegetable Tacos:
- 2 lb zucchini halved and sliced
- Vegetable oil
- 2 Corn Cobs
- Sea salt
- ½ teaspoon ground cumin
- 10-12 small corn or flour tortillas warmed
- Sour cream
- Salsa
- Chili/chili powder
- Black pepper
Put the zucchini in a mixing bowl and drizzle with oil. Mix well so they are lightly coated. Heat a stovetop grill pan/griddle until hot. Cook the zucchini slices for 3-5 minutes on each side until charred. Rub the corn cobs with oil, then cook for 10-15 minutes, turning often, until charred all over. Set aside.
Dice the zucchini slices and put them in a shallow dish. Scrape the charred kernels from the corn cobs and add to the zucchini. Add the cumin. Season with salt and mix well.
To serve, put a generous helping of the vegetable mixture in the middle of each tortilla. Top with a spoonful of sour cream and tomato salsa, sprinkle with chili/chili powder and black pepper and serve immediately.
