If you are like me, then you tend to get the munchies around 9 or 10 pm. At that point, you have three choices: 1. Go to the Rogalski Center and use Buzz Bucks to purchase a snack, 2. Hop in the car and go pick up food from a drive-in or store, or 3. Eat something in your dorm room. As the nights grow colder, the third option begins to look more and more appealing. Microwave recipes are great tools to make eating in your dorm room yummier and easier.

Here is a wonderful coffee cake recipe that can be used as both a hearty breakfast option or a sweet, late night treat:
Microwave Coffee Cake
1 1/2 c. buttermilk biscuit mix
1/4 c. sugar
1/2 c. milk
1 egg
2 Tbsp. oil
1/3 c. buttermilk biscuit mix
1/3 c. brown sugar (packed)
2 Tbsp. butter, softened
1 tsp. cinnamon
Topping:
3/4 c. powdered sugar
1 Tbsp. milkÂ
Stir together 1 1/2 cups biscuit mix and sugar in a mixing bowl. Add 1/2 cup milk, egg and oil and mix well. Pour into greased 8 in. round microwavable dish. Mix 1/3 cup biscuit mix, brown sugar, butter, and cinnamon until crumbly, then sprinkle over batter. Microwave for 4 1/2-5 1/2 minutes. Meanwhile, make topping by stirring together powdered sugar and 1 Tbsp. milk. Let cake cool for 5 minutes, and then drizzle topping. Serve warm.
