It is no secret that the Philadelphia weather has been down right depressing, All this snow, rain, cold and dreariness is enough to make anyone book a trip to Mexico ASAP. For those of us that do not have the opportunity to drop everything and fly to warmer weather, I have created a recipe that will allow you to relish in the taste of Mexico without having to leave SJU. I present to you, The Mexicado!
Here’s what you will need:
-Avacados (I buy mine from Produce Junction, 3 for 2 dollars!)
-Sweet Corn (Canned, frozen, or fresh)
-Black Beans
-Salsa (Whatever type you prefer! I like medium for a kick)
-Cheddar Cheese
-Sour Cream to taste
This recipe is not only quick, it is SO easy! All you need is one bowl to mix together the corn, black beans and salsa. Slice the avocados in half, remove the pit, and fill the hole with the black bean, corn and salsa mixture. Then, simply top with cheddar cheese and bake at 375 (or place in the toaster oven) and wait for your cheese to melt. If you like sour cream, try a dollop on top!Â
