This quick and easy recipe is a healthy option for a dinner filled with vegetables and protein. Some stir-fry dinners contain lots of other added ingredients, but making it yourself gives you the control so you know just what you’re eating!

Ingredients
1 chicken breast
ÂĽ cup sliced carrots
ÂĽ cup sliced red bell pepper
ÂĽ cup sliced zucchini
ÂĽ cup onions
½ cup quinoa
Olive oil
½ lemon
Pepper or other seasonings
Soy sauce – I used soy ginger sauce from whole foods

- Bring ½ cup of quinoa and 1 cup of water to a boil. Once brought to a boil, turn heat to low and cover quinoa. Let simmer for about 15-20 minutes until quinoa is fluffy.
- Prepare chicken breast by cutting into small pieces and seasoning to liking. Heat up olive oil in pan, adding lemon juice if preferred to flavor the chicken. Cook over medium heat.
- While the chicken is cooking, prepare veggies by slicing into small thin pieces.
- When chicken is almost done, add veggies to the same pan. Continuously stir until veggies are cooked thoroughly.
- Add quinoa to the pan, and lastly add in desired amount of soy sauce. Stir together over low heat until it is mixed throughout. Enjoy!!
