The week of Halloween has finally arrived. Plans of dressing up as classic ghostly figures or eighties chicks to hit the town may have to be put on hold this year, but that doesn’t mean an epic brunch full of fall favorites and some gal friends can’t still happen this Sunday.
Halloween menus often include renditions of bloody cupcakes, mummy meatballs, or eyeball pasta. The aesthetics are clearly missing, and I can’t imagine the taste being very appetizing either.
I am going to share two of my favorite holistic Instagram influencers, who preach health with a focus on the well-being of mind, body, and soul. I am including four of their recipes that are ideal for autumn! These Instagram influencers have showcased their spicy fall recipes on the following accounts, perfect for a Halloween brunch fueled with fresh ingredients and a meal that wonât fail to impress.

Olivia Noceda lives for all things October, especially her oat milk lattes, which compliment a balanced lifestyle. Her gram is packed full of adorable selfies, homemade charcuterie boards, documentation of dinner with friends, and sprinkled with delightful recipes throughout. Her captions include honesty about what she’s grateful for and appreciation of the little moments. This makes me even more inclined to cook and utilize her recipes!

Side Dish: Fall Staple Muffin (AKA the perfect side dish to have on hand)
- 1 1/2 spotty banana
- 1 cup organic pumpkin purée
- 1 egg
- 5 tbsp softened vegan butterÂ
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- dash of cinnamon
- 1 tsp baking soda
- 1 cup all-purpose flour (can sub whole wheat and probably 1-1 gf flour!)
- 1/2 cup raw walnuts, choppedÂ
- 1/4 cup chocolate chipsÂ
- some oats to sprinkle on topÂ

Main Dish: Cardamom Pumpkin Spice Pancakes (a necessity to impress the gals!)
- 1 cup 1-1 GF flour (can use reg, whole wheat)
- 1/4 tsp cardamom
- 1tsp pumpkin pie spice
- 1 1/2 tsp baking powder
- 1 tbs hemp seeds
- 1 tsp salt
- 1/2 cup pumpkin pureÌe
- 1 egg
- 1/2cup nut milk/mylk (+2 tbsp if needed)
- 2 Tbs maple syrup
- olive oil for the pan
- TOPPING:
- 1/4 cup gluten-free oats
- 1/4 cup whole, raw hazelnuts
- 1/2 tsp cinnamonÂ

She identifies herself as both a cook and a journalist and shares insight on the responsibility of a health Instagram influencer to inspire young individuals with accurate information. She showcases her genius recipes from gooey breakfast sandwiches, to tater tot waffles, and has been crushing the fall food game lately too.
The first dish is incredibly easy to create for college kids with not much space to work with. Slice and dice some apples, and drizzle the goodies on top! The second is perfect for night-before preparation, and it is easy for each brunch participant to have their own individual oatmeal.

Recipe #1: Apple slices topped with melty chocolate, vegan caramel, and chopped walnut

To make:
- Slice 2 small apples and arrange on a plate
- Melt 1/2 cup dark chocolateÂ

Caramel:
- 1 1/2 tbsp maple syrup
- 1 1/2 tbsp coconut oil
- 2 tablespoons almond butter

Directions: Heat in a pan or small pot on medium-low heat. Stir frequently until a thick caramel sauce forms, about 5 minutes. Top with 1/4 cup chopped walnuts.Â

Recipe #2: Pumpkin Cheesecake Overnight OatsÂ
- 1 1/2 cups rolled/old-fashioned oats
- 1 cup milk of choice
- 1/2 cup pumpkin purée
- 1/4 cup cream cheese
- 1/2 tsp vanilla
- 1 1/2 tbsp pure maple syrup
- 1/2 tsp pumpkin pie spice
