Summer. So close yet so far away. Sometimes it feels like summer will never come, especially now when we have two weeks of school left, plus finals. To top that off, the weather outside feels more like a continuation of the terrible winter we just had as opposed to the warm, happy and sunny spring we are supposed to be having. The dreary weather and long hours in the library are enough to kill our spirits as our day-dreams are filled with visions of what seems to be an unattainable summer. We dream of hours spent lounging at the pool, long days filled with sun, friends, ice cream and our favorite summer food. Personally, I look forward to grilling out and eating on the deck, homemade ice cream, and plenty of fruity desserts.
For this week’s recipe, I wanted to make something summery. Something involving fruit that would lift people’s spirits and freshen hopes that summer will come, eventually. This cherry dessert fits that description perfectly. A combination between cherry pie and cherry crisp, this recipe is incredibly easy, and seriously delicious. The cake mix topping turns out golden and crunchy, and the cherry filing adds sweetness and moisture for the perfect dessert.
While easy enough for the dorm kitchen, my cherry dessert would be perfect for a summer cookout or potluck. Impress your parents with your new found ability to cook by whipping this dish sometime this summer. Cherries are one of my favorite fruits, and this dessert has become one of my favorites (& that is saying something, because I really, really love dessert). If you like cherries, I guarantee you will love this recipe. My four roommates and I single-handedly ate the entire pan in under 24 hours this weekend, proving that this is truly college student friendly.
All you need is:
2 cans of cherry topping
1 Box of yellow cake mix
1 stick of butter, cold
Pour the two cans of cherry filling into the bottom of the pan. Top with the yellow cake mix. Cut up the cold butter into little pieces and spread evenly on top of the cake mix
Bake @ 375 for 40-60 minutes (depending on your oven). This will take a little longer to bake, but bake until topping turns golden brown and crispy. You can mix the butter around with the cake mix about halfway through baking.
