Cooking on Campus: Easy Fruit Salad

Now that spring is in full swing I am getting excited about the fruits of summer. I love the berries and peaches that are in season and I love incorporating them into what I cook and eat. This easy fruit salad incorporates a variety of great fruit, including strawberries – which are starting to come into season. I love the colors of fruit salad because they are so colorful and fresh and make this healthy dish so fun to eat.

Fruit salad is perfect for dorm cooking because the ingredients are simple and easy to prepare, and it will keep in your refrigerator for a couple of days as an easy and healthy afternoon snack. Try playing around the flavor of yogurt you use, one-day using strawberry or vanilla, or even some Greek yogurt.
 
All you need is:

  • 1 cup grapes chopped in half
  • 2 apples
  • 1 orange
  • 1 cup strawberries (more if you love strawberries)
  • About 1 cup of yogurt (your choice on flavor) 
  • 1. Wash and chop up all fruit and place in a bowl
  • 2. Mix yogurt into fruit
  • 3. Add chopped mint if you want.
  • 4. Enjoy!
