Cooking on Campus: Easy Valentine’s Day Treats

Valentine’s Day is one holiday most people have a love/hate relationship with. Single people hate it, while (most) people with a significant other enjoy it. Whatever your feelings are towards Valentine’s Day, use the holiday as an excuse to make yourself and your friends a yummy treat.

Here are a couple of recipes that are easy enough to make in a dorm kitchen: Strawberry Nutella Poptarts, the old classic Chocolate Covered Strawberries and Strawberry Valentine Cookies.

1. The Strawberry Nutella Poptarts look surprisingly easy to make. All you need are: store bought pie dough (for the crust), Nutella, jam and strawberries. A play on the favorite children’s breakfast Poptarts, these sweet treats look awesome. I mean, who doesn’t love Nutella and strawberries? Check out the recipe here! 

2. Chocolate Covered Strawberries are the classic Valentine’s Day treat. You can buy them from bakeries or grocery stores, or make them yourself. All you need are: strawberries and chocolate. I suggest making your own – it’s much more rewarding and a lot of fun, especially if you are with friends. Plus, you can lick the chocolate bowl clean. Yum!

3. The Strawberry Valentine Cookies are a store bought strawberry cake mix doctored up and frosted with a heavy cream cheese frosting. The store bought cake mix makes this recipe a great candidate for dorm room cooking and makes 12 – 15 cookies. I gave these cookies a try myself. Here’s how to make them:

All you need are:

           Cookies

  • 1 package strawberry cake mix
  • 2 eggs
  • ¾ cup butter, room temperature

Frosting

  • 8 oz. cream cheese, room temperature
  • ½ stick butter, softened
  • 2 teaspoons vanilla
  • 4 cup powdered sugar

           Cookies

  1. Preheat oven to 350. Mix cookie ingredients until well combined. Roll dough into uniform balls and place on ungreased cookie sheet. The dough will be thick so put flour on your hands if you have a problem with the dough sticking to your hands.
  2. Bake cookies for 8 minutes. Cool on a wire rack.

           Frosting

  1. Mix frosting ingredients together using a hand mixer until combined. Spread onto cooled cookies. You can make sandwiches or just frost them as single cookies.
