Cooking on Campus: Fruit Pizza

We all have recipes that become staples for a certain season, whether it be fall, winter, summer, or fall. Fruit Pizza has become the staple summer recipe for my family, and trust me, it never gets old! There is just something about the sugar cookie crust, cream cheese frosting, and fresh fruit that screams summer and deliciousness. 

Fruit Pizza is a true crowd pleaser. I decided to put this recipe to the test when I made it for my friends for Lutefest this past weekend. By 11:30 a.m., the entire pan had been devoured, just by the six of us in my sextet! The second pan lasted only until about 7 p.m. that evening.

This recipe for Fruit Pizza may also be a kind of aphrodisiac. I grew up hearing the story that my dad married my mom because he was so blown away by this very Fruit Pizza recipe. All you need is: 

    1 bag of powdered sugar
    1 roll of sugar cookie dough
    1 8 oz box of cream cheese, room temp.
    1 cup cool whip (not pictured)
    1 teaspoon vanilla (not pictured)
    Your choice of fresh fruit

1) Cut up sugar cookie dough into little cookie circles, spreading out on a circular pan. Press cookies together to form a solid cookie crust resembling this:


Bake according to the sugar cookie dough package. This step can be done ahead of time, just keep the cookie crust covered so it doesn’t go stale.

To make frosting: Mix 1 8 oz package of cream cheese at room temp with 1 cup cool whip, 1 teaspoon vanilla, and 1 cup powdered sugar. Mix ingredients until easily spreadable
*This frosting can be made without the powdered sugar and vanilla- it tastes basically the same, maybe just a little less sweet. Keep playing with the amounts of powdered sugar and cool whip until the frosting becomes a consistency and taste you like.


3) Spread frosting on cookie dough crust, and decorate with your choice of cut up fruit. Any fruit works perfect for this pizza, so use your favorite!
