How do you make brownies even more scrumptious? Add peanut butter, duh. I stumbled across a peanut butter brownie bite recipe the other day on Pinterest and wondered why I hadn’t thought of adding peanut butter to brownies before.
The recipe calls for making mini brownie bites in mini muffin tins, carving out a hole in the center of the brownie and filling it with warm peanut butter and chocolate chips.
I made half mini muffin bites and half normal muffin size bites. The mini muffin bites were the perfect bite size, but the normal muffin bites were more substantial. I know most college students do not have mini muffin pans, so be reassured that normal muffin tins work just as well.
These treats are perfect for college cooking because the brownies come from a box, and most people have peanut butter and chocolate chips in their pantries already. You do not need cupcake liners for these.
All you need is:
– 1 box brownie mix
– ½ cup chocolate chips and peanut butter chips
– ¾ cup creamy peanut butter
1. Preheat oven to 350. Grease muffin pans.
2. Prepare brownie mix. Spoon batter into greased muffin tins. Bake for 13-15 minutes.
3. Once brownies are out of the oven, let cool. Using your thumb or back of a spoon, create a little crater in the center of the brownie.
4. Warm up peanut butter in a microwave safe bowl for 45 seconds. While brownies are still warm, spoon peanut butter into the center of brownie. Top with chocolate chips.
