DORMestic Goddess: No-Bake Fruit ‘n’ Nut Bars

We’ve all done it. Watched just a little too much Food Network. Nerdily obsessed over the latest Ina Garten masterpiece at the Bookstore and caused a 4-person collision (sorry to all those who may have been injured in that accident). Wiped the drool off of our keyboards after spending 2 hours on foodporndaily.com, but thought “I could never make anything like that!”
 

Wrong! You can make delicious treats for your roommates and friends (or just yourself. Totally acceptable.) without having to trek to Tres Express for ingredients! The following recipe is tasty, healthy and uses only ingredients you can find in your eating club or dining hall. Go for it, foodies!
 
No-Bake Fruit ‘n’ Nut Bars
I cup almonds, or walnuts, or peanuts
1 cup apricots (dried), or raisins, or Craisins (I’m partial to Craisins. Mostly because you can come up with clever names for the bars that involve the word “crazy”)
1 cup old fashioned oatmeal
1 cup honey
1 cup peanut butter (chunky or creamy, your choice!) If you want something sweeter, substitute ½ the peanut butter for ½ a cup of Nutella)
1 tsp cinnamon
Heat the mixture and stir until completely combined in a pan on medium heat.
Remove from heat, let cool a few minutes, then press into a Pam-coated baking pan (9 x 9 or whatever you have!)
Refrigerate for 40-45 minutes, cut up and eat!
*If you want to get crazy, feel free to add: other dried fruits (Dried banana or mango? Throw it in!), chocolate chips, coconut, cereal (something like Cheerios or Total — nothing too sweet) or anything else that you have! Also — these bars keep really well, so you can even cut them up and wrap them in foil individually for a mid-class snack. Happy Snacking!
