Butternut Squash Soup
Combine about two medium-sized squashes chopped and peeled in a pot with two cans of vegetable broth. If you’d like, you can also add chopped and peeled carrot and sweet potato. Bring to a boil. Add a table spoon of grated ginger, lower the heat and continue cooking until all vegetables are tender. Pour mixture into a blender and blend until smooth. Pour back into pot, season with salt and pepper to taste, add one tablespoon olive oil and dash of cinnamon. Enjoy! Recipe serves about six.
