Pumpkin pie isn’t the only way to get your pumpkin fix! If Thanksgiving wasn’t enough to satisfy your craving, these three recipes are delicious, guilt-free, and full of pumpkin flavor.
Pumpkin Pie Yogurt Parfait
Ingredients:
½ cup pumpkin puree
1 TBS maple syrup
½ tsp ground cinnamon
2/3 cup Greek yogurt
1/3 cup granola
sliced strawberries (optional)
Instructions:

In a small bowl, mix the pumpkin puree with the maple syrup and cinnamon.

Serve the parfait in a glass, alternating between pumpkin, yogurt, and granola layers. Top with strawberries if you choose!
Homemade Pumpkin Spice Latte:
Ingredients:
1 cup almond milk
1 cup hot brewed coffee
2 TBS pumpkin puree
2 TBS pure maple syrup
½ tsp pumpkin pie spice
Instructions:

Combine all of the ingredients in a high-speed blender, and blend until smooth and creamy.

Adjust flavor to taste, and serve warm!
Whole Wheat Pumpkin Chocolate Chip Pancakes
Ingredients:
1 cup white whole wheat flour
2 tsp baking powder
¼ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
½ cup pumpkin puree
1 TBS pure maple syrup
1 egg
1 tsp vanilla extract
¾ cup almond milk
1/3 cup chocolate chips
Instructions:

In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

In another bowl, combine pumpkin puree, maple syrup, egg, vanilla and almond milk until smooth.

Combine wet and dry ingredients. Fold in chocolate chips.

Coat a nonstick skillet with butter or cooking spray and drop batter onto the skillet once it is heated. Cook about 2 minutes on each side. Enjoy!
