Pumpkin Spice and Everything Nice: Fall Recipes to Bake

Even though fall officially starts in September, it’s only in November that I start to really crave fall recipes. Don’t get me wrong, I enjoy all the pumpkin and apple pies before November, but there’s just something about November 1st that has me delving into all the soups and warm cinnamon pastries. These recipes hit the spot and definitely put me in the fall mood!

Easy Homemade Apple Bread

This is a recipe that I’ve made several times and is always successful. It makes two loaves, so it lasts a long time—it also freezes well and doesn’t lose its incredible taste in the process. The whole process takes less than a couple of hours, and the recipe is highly customizable. You can add raisins and nuts, or leave them out completely. I make this apple bread every year, and it’s the perfect fall breakfast. 

Apple Cinnamon Oatmeal Cookies

Oatmeal cookies are my favourite type of cookies, and these specific apple oatmeal cookies rank pretty high on my cookie list. They’re soft with an incredible melt-in-your-mouth ability. I skip the icing, but it doesn’t make them any less delicious. The best part? They’re super quick and simple to make, which is essential when you’re busy, but really need a cookie!

Carrot Cake Loaf

Carrots don’t immediately come to mind when I think of fall—but that doesn’t make much sense. Carrots are fall vegetables, and I always love seeing the multi-coloured carrots in stores and farmers’ markets in the fall. This carrot cake loaf is a simple and fast version of making and icing a full carrot cake. This is one of the rare instances where I don’t skip the frosting—to me, a carrot cake is not a carrot cake without cream cheese. So, if you’re making this recipe, then definitely take the extra time to make the frosting.
