When it comes to Passover, I am most definitely a member of the minority: I love matzo! I know, it sounds weird. How could I love matzo? Matzo is usually the food people snub their noses at, take a few bites of as instructed during the Seder, and then push aside until the next year. Well, not me! I’m not exactly sure why – the dry texture, the crunchy bite, the bland flavor – but there’s something about the taste of matzo that I truly, from the bottom of my heart (and stomach) enjoy. Granted, you won’t find boxes of matzo lying around my house all year long (I’ll opt for leavened bread when I can), but when the calendar flips to April, the smell of Spring finally fills the air, and #K4P (kosher for Passover) begins to overload my Instagram feed, matzo becomes a staple. Plain matzo, matzo pizza, matzo brei, matzo pb&j, matzo granola; you name it, I’ll eat it. However, given that I am likely flying solo in the plain matzo department, I’ve compiled a handful of my favorite matzo recipes to turn an otherwise un-loved food into a must-try treat. I promise, whip up one of these recipes and in no time you’ll be saying “mo’ matzo, please!”
