Â
You will need:
2 12-cupcake pans
3 apples of your choice (I used Granny Smiths)
5-6 tablespoons of brown sugar
2 tablespoons of granulated sugar
3 teaspoons of cinnamon sugar
1 box of pre-made puff pastry (thawed)
-
Preheat the oven to 350° F. Cut and peel (if desired) the apples and place in a medium-sized bowl. Mix in the brown sugar, granulated sugar, and cinnamon sugar. Place this in the refrigerator for 1-2 hours to marinade.
-
Take the puff pastry and cut it into squares. Place the squares into cupcake pans. Make sure you have extra left over for the tops of the mini pies.
-
Fill the squares with a decent amount of apple filling. You do not want the filling to be too high over the lip of the pan. I usually eyeball it to about Âľ in below the lip.
-
Use the remaining pastry puff and cover the pies in a criss-cross pattern or whatever pattern you would like.
-
Place the pans in the oven for about 10-15 minutes or until golden on the top.
-
Let cool and enjoy!
Serving suggestion: try with a scoop vanilla ice cream.
