A Collegiette’s Kitchen: What I Love About Fall

Pumpkin, it’s all I’ve been craving this season. Pumpkin Spice Lattes from Starbucks. Pumpkin Pie Frozen Yogurt from Yogurtland. Pumpkin Cupcakes from Sprinkles. Need I say more?
However, being on the college budget that I am, buying these tasty treats don’t always help my wallet because the money definitely adds up! So why not whip up your own pumpkin treats? Here are some delicious recipes that will tingle your taste buds with leaving you craving more!

This recipe is EASY.

No-Bake Pumpkin Pie Prep Time: 12 minutes Total Time: 2.5 hours
Ingredients:
• 9 inch prepared graham cracker crust or feels free to make your own!
• 8 ounce package frozen whipped topping
• 8 ounce package cream cheese
• 1 cup canned pumpkin puree
• 1 1/2 cups confectioner’s sugar
• 1 cup chopped pecans or walnuts (optional)

1. In a large bowl, mix whipped topping, cream cheese and pumpkin pure until all chunks of cream cheese and whipped topping are gone.
2. Slowly mix in confectioner’s sugar 1/2 cup at a time,
3. Fold in pecans or walnuts if desired, reserving a few tablespoons for garnish.
4. Pour pumpkin mixture into crust and even out with spatula. Garnish with pecans or walnuts
5. Set in freezer at least 2 hours. Remove right before serving and store in freezer.

This recipe definitely doesn’t require a lot of ingredients so it’s easy on the wallet, and taste absolutely delicious! Go ahead and give it try!
