5 Greek Yogurt Substitution Recipes

Greek yogurt is no longer just a breakfast food, it can be used as a healthy substitute in breakfast, lunch, dinner, and dessert recipes! Say bye-bye to your Greek yogurt and granola breakfast, and hello to some new, yummy options:

1. Blueberry Pancakes

recipe from: recipegirl.com

Ingredients:

 2 cups Greek Yogurt (you can try using Voskos blueberry flavor)

1 egg

1/2 cup flour

1 teaspoon baking soda

Instructions

Mix egg into yogurt with baking soda and flour. The mixture will be thick. Scoop batter onto heated skillet.

2. Chicken Salad Sandwich

Ingredients

1 large chicken breast, cooked, cooled, and chopped

1/2 cup plain greek yogurt

 2 tbsp dijon mustard

1/2 lemon, juice

1 stick celery, diced

2 tbsp red onion, diced

1/2 cup apple, cut into chunks

1 tbsp raisins 6 walnuts, chopped

8 grapes, sliced in half

Instructions

Mix all ingredients into a large bowl

3. Mac and Cheese

Ingredients:

4 ounces whole wheat macaroni

1/2 cup onion-garlic puree

1/2 teaspoon dry mustard

1 cup shredded cheddar cheese

1/3 cup plain greek yogurt

1/4 cup whole wheat bread crumbs

 1/4 cup grated parmesan

Instructions

Cook macaroni according to package. Preheat oven to 425 degrees. Bring onion-garlic and dry mustard to a simmer iin a small saucepan, add in cheddar and mix until melted. Mix cheese sauce and macaroni together. Add macaroni to baking dish, sprinkle bread crumbs over it. Bake for about 10 minutes.

4. Low-Fat Guacamole

Ingredients:

3 medium avocados

 2 cups plain greek yogurt

 2 tbsp lime juice

1/4 teaspoon lime zest

5. 2 cloves garlic, minced

2/3 cups red onion, diced

 2/3 cup roma tomatoes, diced

1 teaspoon jalapeno, chopped

1 tpsp cilantro, minced

Instructions

Scoop avocado into bowl and mix with greek yogurt. Add rest of ingredients and mix well. 

5. Frosted Vanilla Cupcakes

Ingredients

2/3 cups vanilla greek yogurt

2 cups flour

1 1/4 teaspoon  baking powder

3/4 teaspoon kosher salt

1/2 teaspoon baking soda

5 tablespoon unsalted butter, room temp

1 1/4 cup sugar

2 eggs

Frosting:

1 cup plain greek yogurt

1 1/2 cup semisweet chocolate chips

12 tablespoon unsalted butter, room temp

Instructions

preheat oven to 350. In a medium bowl, mix flour, baking powder, salt and baking soda, set aside. With an electric mixer, mix cream butter and sugar until fluffy, beat in eggs one at a time. alternate adding flour with Chobani in 3 additions, starting and ending with flour. Pour mixture into cupcake pan, bake about 15-20 minutes. Let cool for 10 minutes. For frosting, melt chocolate in the microwave until melted. set aside to cool, 15-20 minutes. mix butter and yogurt with a whisk and frost cupcakes.
