Who’s ready for some easy and delicious baking? I apologize to collegiettes without ovens, but be sure bookmark this recipe under “things to do when I have an oven,” because you won’t want to miss it!
I don’t know about you, but some days I get major cravings for warm, fresh desserts right around when I need to start studying (or doing anything, really). But since I am on campus, without a car, and rarely have ingredients on hand, I’ve learned to search the markets on campus when I really want to make something. Thank goodness these markets are open until 1 am!
My favorite dessert to make from on campus finds would definitely be miniature pizookies, much like the ones found at BJ’s restaurants. Not only do these little cookies taste like gooey heaven, but they are also relatively easy to clean up, as well. Believe me, I know the last thing you’ll want to do after gorging on cookies is wash dishes!
So here’s what you’ll need:
- A cupcake tin
- A roll of premade cookie dough
- Cupcake paper liners
- Ice cream of your choice
All of these elements can be found in on campus markets like Earl’s or the Village Market, although you can buy these at any regular grocery store, as well. The preparation for these pizookies is pretty straightforward. First, follow the directions specified on the cookie dough package, but instead of putting the dough sections on a cookie sheet, place them in a lined cupcake tin. In the tin the cookies cannot spread and bake evenly, so the center of the cookie will stay warmer and gooier while the edges harden a nice golden brown. Also, the cookie cakes form a perfect cup for your scoop of ice cream. So, after the cookies are baked, removed from the oven, and properly cooled (for around 5-10 minutes,) help yourself to a large spoonful of ice cream and dig in! Be happy knowing that after you satisfy your craving, there is no unruly baking aftermath to clean up because you can simply throw away the cupcake liners.
