We love Pumpkins: Recipes to Try this Fall!

October’s here, and that can only mean one thing: pumpkin.  Trust me, the taste, the smell, and the idea will take over your life.  For most women, the obsession includes pumpkin spice lattes and pumpkin muffins and pumpkin tweets.  Now for most men, I advise you to check yourself before you decide to make fun of the next girl that’s dying over something pumpkin, because, if you’re lucky, she might just make you a batch of pumpkin muffins with this delicious recipe or let you try a small sip of her homemade pumpkin spice latte.

 

Pumpkin Muffins

Prep Time: 10 min

Cook Time: 20 min

Total Time: 30 min

 

Recipe: adapted from Smitten Kitchen

Serves: 12

 

Ingredients

1½ cup canned pumpkin

½ cup butter, melted

3 large eggs

1½ cups plus 2 tablespoons sugar

2 tsp pumpkin-pie spice

1 tsp baking powder

½ tsp baking soda

1 tsp salt

2¼ cups flour

2 tsp cinnamon

 

Instructions

  1. Preheat the oven to 350 F. Line or grease two muffin tins.
  2. Combine the pumpkin and butter, then mix the eggs in one at a time.
  3. Add 1½ cups sugar, pumpkin-pie spice, baking powder, baking soda, and salt. Stir to combine.
  4. Stir in the flour, then divide among muffin tins.
  5. Mix the remaining 2 Tbsp sugar with the 2 tsp cinnamon, and sprinkle over the tops of the unbaked muffins.
  6. Bake for 20-25 minutes.

 

 

 

 

Pumpkin Spice Lattes

Time:  10 minutes

Ingredients

2 cups milk

2 tablespoons canned pumpkin (not pumpkin pie mix)

1 to 2 tablespoons sugar (to taste)

½ teaspoon pumpkin pie spice

1 tablespoon vanilla

½ cup hot brewed coffee

Whipped cream

Dash pumpkin pie spice

2 cinnamon sticks

 

Instructions

  1. In 2-quart saucepan, heat milk, pumpkin and sugar over medium heat until hot (do not boil). Remove from heat.
  2. Stir in 1/2 teaspoon pumpkin pie spice, the vanilla and coffee.
  3. Pour into 2 large mugs. Garnish each with whipped cream, dash pumpkin pie spice and a cinnamon stick
