As a current college student myself, it’s sometimes tough to think of meals to cook for myself or for my friends that don’t require too much skill, but that are also healthy. It’s so easy to fall into the routine of making Ramen noodles, mac and cheese, or chicken nuggets for every meal. It’s important to fuel your body with good food that is sustainable and healthy. Here are some easy, fast and healthy meals that I enjoy making!
Vegetable STir Fry
Vegetable stir fry is one of my favorite go-to meals that is quick and easy to make. I normally buy extra ingredients when I go shopping so that I can cook and eat this meal for multiple nights. I love this meal because there are so many options of vegetables to put in it, and I enjoy trying out different combinations. You can put broccoli, carrots, brussels sprouts, onions, green beans, peppers, mushrooms, etc. I usually add teriyaki or soy sauce to my stir fry to top it off!
SMootie Bowls
Smoothie bowls are another great option for breakfast, lunch, or even just for a snack. You can use any fruit of your choice in your smoothie, and there truly are so many options that taste great blended together. My go-to is simply a strawberry-banana smoothie. Once you have your own blender it’s so easy to stick to this healthy meal. I usually add granola, cut-up fruit, and sometimes peanut butter to the top of my bowl to add protein!
Potatoes and Eggs
This is another simple and easy meal recipe that you can quickly whip up after a long day of classes. Simply cut up and fry potatoes and eggs together in a pan, and add any type of cheese to blend the two together. This meal is a great source of protein and Vitamin C specifically, and will keep you full! You can also add cilantro and pepper to the top for some more flavor!
Lemon chicken tacos
I personally love all types of tacos, but lemon chicken tacos are a healthy and tasty meal that is easy and fast to prepare. Simply pour lemon juice on top of chicken before cooking to add flavor. You can do as much or as little lemon flavor as you prefer. One you chicken is done cooking, chop it up and simply put it in a taco shell. You can add whatever toppings you like to conclude this healthy meal. I typically add lettuce, tomatoes, and peppers to my lemon chicken tacos!
