6 Easy Snack Recipes to Get You Through Class

Often we are tempted by vending machines and the various dining options around campus during the awkward times in class between breakfast, lunch, and dinner. Instead of spending your money on snacks (or just suffering being hangry), here are some tried and true recipes that are easy to take to class! (Links to recipes in the titles) 

No Bake Monster Cookie Energy Bites

These are super easy to whip up the night before class, and give you that boost you need to get through that 3 hour long class!

Ingredients needed (makes 16 bites)

  • 1½ cups large oat flakes
  • ½ cup peanut butter
  • â…“ cup honey
  • ÂĽ cup mini M&M’s
  • ÂĽ cup mini chocolate chips
  • ½ tsp vanilla

Cream Cheese Stuffed Baby Bell Peppers

Ranch is always fun with vegetables, but you know what’s even better? Cream cheese! This is one of the simplest recipes, but it gives so many options for customization! Create your own cream cheese spread by adding things like sun dried tomatoes or jalapenos to the mix.  

Instructions

  1. Wash each baby pepper and slice the top off and scoop out any little seeds that may remain.
  2. With a blunt knife (like a butter knife) slowly stuff each pepper with cream cheese until they are completely full.
  3. Store in the fridge for up to 3 days.

     

    Pan Fried Cinnamon Bananas

    This recipe is an easy way to get rid of any overripe bananas you may have, and is simply delicious!

    Ingredients needed

    • 2 bananas Slightly Overripe
    • 2 tablespoons sugar (you can substitute granulated Splenda, if you like)
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • oil spray

     

    Salted Caramel Coconut Popcorn

    You can never go wrong with popcorn as a snack. It tastes yummy, and can be decently healthy for you!

    Ingredients needed

    • 1/2 cup popcorn kernels
    • 1 tbsp coconut oil
    • 5 tbsp maple syrup
    • 1 tbsp coconut oil
    • 1/2 tsp vanilla extract
    • 1/4 tsp salt
    • 2 tbsp shredded unsweetened coconut

    Veggie Chips

    This recipe takes a little more effort, but it is sure worth it! Turn whatever vegetables you have into some yummy chips. For extra fun, try seasoning with your favorite herbs or a seasoning blend like Italian or taco!

     

    Crispy Garlic Bread Chickpeas

    Skip the bag of Gardetto’s and munch on this crispy chickpeas! They are filling, and good for you too!

    Ingredients needed

    • 1 can chickpeas
    • 2 teaspoon olive oil
    • ½ teaspoon garlic powder
    • 2 pinches cayenne pepper (omit if you don’t want any heat)
