Easy and (mostly) Cheap College Recipes: Red Velvet Cupcakes

Attending any holiday parties this season? Naturally, you’ll be getting together with someone to celebrate something. If you need a nice treat or gift to bring along, I’ve got a delicious idea for you!

Two of my best friends got married (to each other!) last week. It was semi-last minute, and I was searching for any kind of gift I could pick up between classes and studying for finals. My friend suggested a muffin tin because they don’t have one, and we’ve needed one at their house before. So I went with it! And I made some yummy cupcakes to put in the pan. Wrapped it all up in cellophane, and it was delicious to go!

Here are the ingredients and the instructions for the delicious red velvet cupcakes I made.

Ingredients

  • 1 box of Duncan Hines Red Velvet Cupcake Mix, frosting and filling included (yes, they were from a box)
  • Vegetable or cooking oil
  • Butter (not margarine)
  • Water
  • Sprinkles
  • Cupcake cups (the little papers that hold them)
  • A muffin tin of your own, to bake them in

Instructions

  •  I recommend following the box instructions. They’re super easy and actually pretty quick to make. I will, however, offer a few tips that the box left out:
  •  After the cupcakes have cooled and you’ve removed them from the pan, stick them in the fridge for about 10-20 minutes. This will help cool them completely, quicker than sticking them on the counter, and it helps the frosting glide on smoother.
  • The frosting was a little bit difficult for me to beat and get the right consistency. Mine was very thin, so I mixed it longer and added extra powdered sugar to thicken it.
  • The frosting goes inside a bakery bag (included), and the box says to put the bag in a tall glass and then pour in the frosting. This part is easy. Next, you cut the tip of the bakery bag and begin to fill the cupcakes. Now, here is where my kitchen became a disaster. Make sure you pinch the tip of the bag right above where you cut it! Otherwise, the frosting will pour everywhere (even all over your…my…remote!).

  • To fill, you just poke the bag into each cupcake and fill. Try a little first and fill more if you have extra frosting. Just make sure to have enough to frost the tops, too.
  • After they’re all frosted, add sprinkles on top! I even used crushed candy canes to add some holiday fun.

  • I also wrapped mine in cellophane and ribbon, as mentioned, but a paper plate would work, too.

These were wonderful and made a great gift! The cupcakes themselves are enough if the person receiving them already has a muffin tin. The box with everything was about $3.50, and the cupcake cups were about $1.50. The most expensive part is probably the sprinkles, which I already had from previous uses, so I didn’t need to purchase more. Pick one color or a bottle of multi-colored sprinkles, so you only have to get one type. Or, if you’re handy with frosting, just decorate the tops with that. Your guests are sure to love them either way, even if they taste much better than they look!
