The Best Thanksgiving Leftovers Recipes

Hey there, Collegiettes!

What’s better than Thanksgiving dinner? Leftovers of course! Here a few easy ways to transform your Thanksgiving favorites into some new and healthy dishes! 

 

Turkey and Vegetable Frittata: This is a great and creative way to use up all the leftover turkey and veggies. This can be served as breakfast or for lunch with a small side salad. Recipe serves 6!

Ingredients: 

6 eggs 

½ tsp. salt 

3 cups of veggies (anything will work – Brussel sprouts, roasted sweet potatoes, asparagus, mushrooms – Just put in whatever you’ve got!) 

2½ cups chopped turkey breast 

2 medium shallots – finely chopped 

Directions: 

1. Preheat over to broil 

2. Combine eggs and salt in a bowl 

3. Heat/oil pan over medium on stove top

4. Add shallots and veggies; cook, stirring frequently 

5. Pour in egg mixture and turkey and stir 

6. Place plan in oven – Broil 5 minutes or until lightly browned 

7. ENJOY

 

Turkey Salad: This is a super easy way to use up the left over turkey as well. Enjoy between two slices of whole grain bread, or on top of a bed of your favorite type of lettuce for a healthy, filling and delicious lunch or dinner. This recipe makes 4 servings.

Ingredients 

½ cup lowfat yogurt 

4 tsp. olive oil mayonnaise 

1 tbsp fresh lemon juice 

1 tsp raw honey 

½ tsp salt 

½ tsp pepper 

2½ cups shredded turkey breast 

2 medium celery stalks 

1 medium granny smith apple (chopped) 

½ cup chopped walnuts 

1 cup halved red grapes 

Directions: 

1. Combine yogurt, mayonnaise, lemon juice, honey, salt and pepper in a bowl and mix well 

2. Combine turkey, celery, apple, walnuts and grapes in a bowl and mix well

3. Add yogurt mixture – mix until blended 

4. ENJOY
