Now that summer has officially begun, it’s only a matter of days before the sweltering temperatures descend upon us 24/7. Usually I’d just seek refuge from the heat by chilling at home with a freezer stocked with ice cream and the air conditioning on full blast, but this year I plan to incorporate a new element into my summer strategy – kakigori. A Japanese shaved ice dessert that’s typically flavored with colorful syrup and more often than not accompanied by other ingredients such as adzuki beans that are embedded within, it’s a delicious way to cool down on a hot summer’s day.
