Things That I’ve Loved Cooking During The Pandemic

Ever since the pandemic started, I’ve been living at home in San Francisco. With the stresses of online school and everything going on in the world right now, I’ve found comfort in my own kitchen. Since being home, I’ve gotten more into cooking and baking. It’s a great way to help me relieve any kind of stress that I have. Here are my favorites foods that I’ve made so far in quarantine.

1. Avocado Toast with an Egg

I know what you are thinking: avocado toast is such a basic food, but it actually is really good. With my avocado, I make sure to mix in some good seasoning like salt and pepper, garlic powder, lime or lemon juice, and sometimes some chilli flakes for a little spice. Once I put my avocado on my toast, I cook up an egg (either fried or scrambled). To take it even further, I will sometimes add some balsamic vinegar glaze to add some acidity. This is the perfect, easy savory dish to have for breakfast, lunch, or even a snack. 

 

2. Popovers

    Back before the pandemic hit, my family and I would spend the last few weeks of summer up in Maine at a place called Migis Lodge. My sister and I would be so excited when the kitchen would serve popovers at dinner. Popovers are basically like an eggy bread roll. During the beginning of the pandemic, my sister and I started our cooking craze and decided to attempt to cook popovers. Surprisingly it’s really easy to make and very delicious! I used Ina Garten’s recipe if you want to try.

3. Pizza 

    Pizza was the first thing I learned how to cook. When I was really little, I would always stand on a stepstool and help my dad make cheese pizza. Being a born and raised New Yorker, my dad gained all this knowledge on how to make the perfect pizza. Being away at school makes me miss having my dad’s famous cheese pizza. Since I’ve been back home, I’ve gotten to make more pizza and have father-daughter time with my dad. 

 

4. Lemon Garlic Chicken 

    This is another one of Ina Garten’s recipes that I had to try. This dish is chicken breasts with lemon garlic white wine sauce. It took a lot of time and patience for my sister and I to cook this but the outcome was delicious. The chicken is nice and juicy and flavorful from the sauce. I would definitely recommend trying this and it is a great dish if you are sick and tired of eating plain grilled chicken.

5. Smoothies

    I’ve always loved smoothies because they’re easy to make and it gives you room to experiment with different flavors. My favorite smoothie that I’ve made is with frozen strawberries, bananas, peaches, orange juice, and a little bit of lime juice. This drink is also a great way to easily get all your vitamins and minerals.
